Crispy Parmesan Artichoke Hearts

Crispy Parmesan Artichoke Hearts are oven-baked bites coated in a seasoned mixture of Parmesan cheese, panko breadcrumbs, garlic powder, and Italian seasoning. The artichokes are dipped in egg wash to help the crust adhere, then baked until golden and crisp. Served with herb lemon aioli, these make a flavorful appetizer or side dish.

Description

This recipe uses quartered, drained, and dried artichoke hearts tossed with olive oil, then coated first in beaten eggs and then in a flavorful mixture of finely grated Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and black pepper. Baking on a parchment-lined sheet at 425°F crisps the coating and heats the artichokes through.

The resulting bites have a crunchy, golden crust with the rich umami from Parmesan and herbaceous notes from Italian seasoning. The tender artichoke interior contrasts with the crisp exterior. Serving with a herb lemon aioli dip adds a creamy, bright complement to the texture and flavors.

This dish is suitable as a snack, appetizer, or a vegetable side. Baking rather than frying reduces oil use, keeping the texture light.
