  • 4 cod approx. 2 pounds, fillets
  • 35 butter crackers ie. Ritz or Club crackers
  • ¼ cup Parmesan Cheese
  • 2 Tablespoons butter melted
  • 1 teaspoon lemon juice
  • salt to taste
  • black pepper to taste
  • parsley optional garnish, fresh

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Place cod on a greased baking sheet or line with parchment paper
  3. Place the crackers in a zip lock bag and break into into crumbs. (I use a rolling pin)
  4. In a small bowl, combine the cracker crumbs with parmesan cheese, melted butter, lemon juice and salt & pepper.
  5. Evenly spoon the mixture over top of each fillet.
  6. Bake for approximately 25 minutes.
  7. Remove and top with fresh parsley, if desired.
  8. ENJOY!

  • Substitute panko breadcrumbs for a lighter, lower-calorie crust option.
  • Use gluten-free crackers or panko if needed for dietary restrictions.
