Description
This recipe starts by pounding chicken breasts to an even ½-inch thickness to ensure uniform cooking. The chicken is then coated in seasoned flour, dipped in beaten eggs, and pressed into a crust combining panko breadcrumbs, crushed cornflakes, shredded Parmesan, dried parsley, and garlic powder.
Baking at 375°F on a rack or greased baking pan allows air to circulate for a crispy crust while keeping the meat moist. After baking 20–25 minutes, the chicken is briefly broiled to deepen the crispness and achieve a golden brown finish. The internal temperature should reach 165°F for doneness.

Ingredients
- 4 chicken breast about 6 ounces each, boneless skinless
- 2 egg beaten, more if needed
- 1 cup all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 ¾ cups panko bread crumbs
- ¾ cup cornflake crumbs
- ½ cup Parmesan Cheese shredded
- 2 tablespoons parsley dried
- 1 ½ teaspoons garlic powder
Instructions
- Preheat oven to 375°F.
- Pound chicken breasts to ½ inch thickness.
- Beat egg and set aside. In a separate shallow dish, combine flour, salt and pepper.
- In a second dish combine Panko bread crumbs, cornflake crumbs, Parmesan, parsley, and garlic powder.
- Dip chicken in flour first and then egg and finally in the crumb mixture pressing the crumbs to adhere.
- If you have a metal rack, place it on a large rimmed baking sheet. If not, spray the baking sheet with cooking spray. Add the chicken to the rack or pan and spray the top with cooking spray.
- Bake for 20 to 25 minutes or until juices run clear. Broil for 2 to 3 minutes until crispy and internal temp has reached 165°F.

- Check the internal temperature of the chicken breasts; it should reach 165°F to be safe to eat.
