Crispy Pasta Chips
Description
This recipe calls for cooking bowtie pasta until very al dente, then drying it completely on paper towels to prevent oil splatter during frying. Deep frying in olive oil or similar vegetable oils crisps the pasta into chips with a golden color. While frying, a seasoning blend of Parmesan cheese, red chili powder or cayenne, black pepper, garlic powder, and salt is prepared to sprinkle on after frying.
The resulting pasta chips have a crunchy texture that contrasts with the familiar pasta shape and are ideal served with marinara or cheesy Alfredo sauce as dips. The use of bowtie pasta provides visual appeal and even frying.
Careful drying of the pasta before frying is emphasized to avoid oil splatter. Frying in batches is recommended to prevent overcrowding, which can cause soggy chips. The notes mention that tossing pasta in plain flour can help prevent sticking and improve crisping if needed. Additionally, an air fryer can be used with minimal oil for a healthier alternative.
Ingredients
- 1 lb bowtie pasta
- olive oil for deep frying
- ¼ cup Parmesan Cheese grated
- 1 ½ teaspoon red chili powder or cayenne pepper
- 1 teaspoon black pepper ground
- 2 teaspoon garlic powder
- salt to taste
To serve-
- marinara sauce or
- Alfredo sauce cheesy
Instructions
Deep fried method
- Cook pasta until al-dente or use left over pasta to make these chips. I prefer bow tie (farfalle) pasta to make chips as it looks very pretty and also crisp evenly when deep fried.
- Bring a large pot of water to boil. Add a generous amount of salt and 2 teaspoons of olive oil to boiling water. Add pasta to boiling water, and cook it very al-dente.
- Drain pasta from boiling water. Immediately spread it on a couple of kitchen paper towels to dry it out. IMPORTANT: Make sure to dry the cooked pasta well. If pasta is dry, water in pasta will cause a spattering of oil when deep fried.
- Olive oil was used to fry pasta in this recipe. Olive Pomace oil, extra virgin olive oil, or vegetable oil should work.
- Heat oil in a deep pan. Once the oil is hot, deep-fry the pasta, till it turns golden brown.
- While pasta is frying, make the seasoning. In a small bowl combine salt, ground pepper, cayenne, garlic powder, and a little Parmesan cheese on top to finish off.
- Drain pasta from the oil into a large bowl.
- Add seasoning to it immediately. Toss well and serve.
Air fryer method
- Cook pasta of your choice very al-dente in salted boiling water.
- While the pasta cooks make the seasoning. Combine salt, ground pepper, cayenne, garlic powdered and parmesan cheese.
- Drain pasta into a bowl. Add 2 to 3 teaspoon olive oil over cooked pasta.
- Add seasoning mix to pasta. Toss well.
- Air fryer at 400F for 10-12 minutes, tossing pasta in the basket a few times in between.
- Remove from the air fryer and let it cool for a few minutes.
- Serve with any dipping sauce. We love spicy marinara sauce, cheesy alfredo sauce, and penne vodka dipping sauce.
Notes
- Cook pasta until very al dente for the best texture after frying.
- Dry the cooked pasta thoroughly before frying to prevent oil splatter.
- If pasta sticks together, toss it lightly in plain flour before frying.
- Fry pasta in batches to avoid overcrowding and ensure crispiness.
- Olive pomace, extra virgin olive, or vegetable oils like canola or sunflower work well for frying.
- An air fryer can be used with 1–2 teaspoons of oil for crisp chips with less fat.
