Description

This recipe involves arranging pepperoni slices spaced evenly on lined baking trays or an air fryer basket and cooking at a high temperature until the slices crisp and edges curl slightly. Baking requires close attention to prevent burning, typically about 6 to 8 minutes at 390°F. Air frying takes 2 to 3 minutes at 400°F. The microwave is an alternative, using short intervals to achieve crispness.

As heat renders out fat, the pepperoni slices become crunchy, transforming from chewy slices into bite-sized chips. The resulting texture is firm and crisp while maintaining rich pepperoni flavor. Instructions

Oven Method

  1. Preheat the oven to 390F / 200C.
  2. Line two baking trays with greaseproof paper. Arrange the pepperoni slices (12 per tray) with a little space between them. If flavouring, add now (see notes).
  3. Bake in the oven for 6 - 8 minutes. Careful not to burn and don’t overcook as they will crisp up when cooled.
  4. Remove the pepperoni crisps from the oven and pat dry with kitchen paper.

Air Fryer Method

  1. Preheat the air fryer to 200C / 400F. Air fry the pepperoni slices in a single layer for 2-3 minutes or until crisp. Depending on the size of the air fryer basket, you may need to do this in several batches.

Microwave Method

  1. Microwave the pepperoni in 20-second intervals. Mine take 40-60 seconds. The time depends on the pepperoni and on the power of your microwave.

Notes

  • This recipe makes 24 pepperoni chips, serving six people with four chips each.
  • Because some fat renders out during cooking, the final fat content is lower than the raw pepperoni suggests.
  • Spice variations include adding chili powder, parmesan with dried herbs, or sun-dried tomato paste with mozzarella and basil for different flavor profiles.
  • Store leftover chips in an airtight container for 1-2 days to maintain crispness.
