Description
This recipe involves arranging pepperoni slices spaced evenly on lined baking trays or an air fryer basket and cooking at a high temperature until the slices crisp and edges curl slightly. Baking requires close attention to prevent burning, typically about 6 to 8 minutes at 390°F. Air frying takes 2 to 3 minutes at 400°F. The microwave is an alternative, using short intervals to achieve crispness.
As heat renders out fat, the pepperoni slices become crunchy, transforming from chewy slices into bite-sized chips. The resulting texture is firm and crisp while maintaining rich pepperoni flavor. Optional seasonings allow customization: chili powder for heat, parmesan with herbs for an Italian twist, or sun-dried tomato and mozzarella for a margherita-style snack.
These pepperoni chips make a simple snack or appetizer with 0g net carbs and can be stored for 1 to 2 days in an airtight container. Serving size is about four chips per person for a group of six.

Instructions
Oven Method
- Preheat the oven to 390F / 200C.
- Line two baking trays with greaseproof paper. Arrange the pepperoni slices (12 per tray) with a little space between them. If flavouring, add now (see notes).
- Bake in the oven for 6 - 8 minutes. Careful not to burn and don’t overcook as they will crisp up when cooled.
- Remove the pepperoni crisps from the oven and pat dry with kitchen paper.
Air Fryer Method
- Preheat the air fryer to 200C / 400F. Air fry the pepperoni slices in a single layer for 2-3 minutes or until crisp. Depending on the size of the air fryer basket, you may need to do this in several batches.
Microwave Method
- Microwave the pepperoni in 20-second intervals. Mine take 40-60 seconds. The time depends on the pepperoni and on the power of your microwave.
Notes
- This recipe makes 24 pepperoni chips, serving six people with four chips each.
- Because some fat renders out during cooking, the final fat content is lower than the raw pepperoni suggests.
- Spice variations include adding chili powder, parmesan with dried herbs, or sun-dried tomato paste with mozzarella and basil for different flavor profiles.
- Store leftover chips in an airtight container for 1-2 days to maintain crispness.
