Crispy Red Potatoes In The Air Fryer

These Crispy Red Potatoes are coated in olive oil and Herbes de Provence, then air fried to golden brown with crisp edges and tender centers. Soaking cut potatoes with baking soda helps remove starch, enhancing crispness. This easy side pairs well with various main dishes and offers a flavorful, satisfying texture from the seasoning blend and cooking method.

Description

Starting with uniform red potato pieces soaked briefly in water with baking soda reduces surface starch, which promotes crispiness in the final cooked potatoes. After draining and drying thoroughly, the potatoes are tossed in olive oil with a blend of Herbes de Provence, salt, and ground black pepper, evenly coating each piece for balanced seasoning.

Cooking in the air fryer at a high temperature crisps the potatoes’ outer edges while keeping the insides tender and moist. The recipe suggests splitting larger quantities into batches to maintain adequate air circulation for even cooking. The final result is a side dish with golden, crunchy surfaces complemented by aromatic herbs.

This approach delivers a practical way to prepare smoky, herb-seasoned potatoes without deep frying or oven roasting, ideal for pairing with grilled meats, sandwiches, or as a snack.

Ingredients

Servings
  • 1.5 lbs potato red
  • 1 tbsp olive oil
  • 1 tsp herbes de provence
  • ½ tsp salt
  • ½ tsp black pepper ground

Instructions

  1. Wash and cut the potatoes into uniform pieces. Place them in a bowl with enough water to cover them. Stir a tablespoon of baking soda to the water and steep them for 10 minutes. This will draw the starch out and make the potatoes crispy.
  2. Drain the water and dry them using paper towels.
  3. In another bowl mix the oil, Herbes de Provence and salt and pepper together. Add the potatoes and mix.
  4. Place potatoes into the air fryer basket. If your air fryer is smaller, then place only half the quantity of potatoes in the basket. The other half can be added once the first batch has cooked.
  5. Air fry at 400 degrees F for 18-20 minutes, or until the potatoes are golden brown and have crispy edges.
