  • 2 lbs potato Yukon Gold variety, halved or quartered if larger
  • 1 cup white vinegar
  • 2 tbsp white vinegar
  • 1 tbsp kosher salt
  • 2 tbsp butter unsalted
  • 1 pinch sea salt flaky
  • 2 tbsp chive for garnish only, fresh, sliced, optional

Notes

  • * I've used small nugget potatoes, halved, or creamers as shown in the photo but most potatoes will work if you're consistent with their size.
  • ** Such as Maldon.
