Description

The recipe begins by preparing an egg wash and a seasoned crumb mixture of panko breadcrumbs, Parmesan, Italian seasoning, garlic powder, and kosher salt. Fresh cheese ravioli are dipped one at a time in the egg wash, then generously coated with the breadcrumb mixture on both sides before being placed spaced apart on a greased wire rack. They are sprayed with cooking spray to encourage browning.

Baked in a preheated oven at 425°F on the lower-middle rack, the ravioli crisp up for 15–20 minutes or until golden brown and crunchy, with a check partway to avoid overbrowning.   • 1 lb cheese ravioli fresh, not frozen
  • 2 egg large
  • 2 TB water
  • 1 cup panko breadcrumbs plain
  • ¼ cup Parmesan Cheese powder form works best, grated
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp kosher coarse salt
  • cooking spray
  • marinara sauce for dipping; your favorite

Instructions

  1. Place oven rack on lower middle position. Preheat oven to 425F. Place wire rack on top of rimmed baking sheet and spray with oil. Set aside.
  2. In a shallow dish (I use a glass pie pan) hand-whisk the eggs and water until fully incorporated.
  3. In another shallow dish, combine the panko, parmesan, Italian seasoning, garlic powder, and kosher salt. Hand-whisk to combine well.
  4. Place a single layer of fresh ravioli in pan with egg mixture. Working one at a time, turn ravioli over to coat with egg mixture. Let excess drip off and coat generously with panko mixture. Press crumb mixture to adhere on both sides of ravioli. Place coated ravioli on greased wire rack. Give at least 1-inch space between each ravioli for even browning. Spray tops of ravioli with cooking spray. 
  5. Bake 15-20 minutes or until tops are golden brown and crisp -- check about 10 minutes in for browning; if it's browning too quickly, cover loosely with foil and continue baking until cooked through (actual bake time depends on brand of ravioli)
  6. Serve immediately with warm marinara sauce. Sprinkle extra parmesan cheese on top if desired. 

Notes

  • To keep the crumb mixture dry and effective, sprinkle it over ravioli rather than dipping repeatedly.
  • Maintain even spacing on the wire rack to ensure uniform browning during baking.
  • Check ravioli color at 10 minutes to prevent burning; cover with foil if browning too fast.
  • Use fresh ravioli, not frozen, for best textural results.
  • Serve immediately with your favorite marinara sauce for dipping.
