Crispy Truffle Roasted Chickpeas

These Crispy Truffle Roasted Chickpeas are an addictive snack that is high in protein and fiber and low in carbs.  Great for an evening snack instead of popcorn.

Ingredients

  • 1 can 15.5 ounces or 2 cups  chickpeas (garbanzo beans), drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon truffle oil
  • 1/4 teaspoon truffle salt or to taste

Instructions

  1. Preheat oven to 400°F degrees
  2. After rinsing and draining the chickpeas, dry them well by spreading out on a paper towel, cover with another paper towel and gently roll them around to dry them, being careful not to squish them.  They will get crispier if they are dry first.
  3. Transfer chickpeas to a baking sheet, pour the olive oil, truffle oil and truffle salt over chickpeas and toss to fully coat them in the oil and salt.
  4. Roast for 20-30 minutes.  After about 10 minutes, shake the pan to turn the chickpeas so that they brown more evenly.  Remove from oven when they are golden brown and crispy.  After removing from oven, season with more truffle salt if desired (season to your personal taste).
  5. These are best served hot and fresh as they will not remain as crispy after cooling!
