  • ½ cup cornstarch
  • ¼ cup granulated sugar
  • 1 ½ tablespoons baking powder
  • 1 teaspoon salt
  • 2 cups milk 2% or whole
  • 2 egg large
  • ½ cup butter or oil, melted
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat a waffle maker to high heat. Set the oven on 200 degrees F. Set a baking sheet, with a rack on it, in the oven to hold and warm the waffles.
  2. Meanwhile, in a large mixing bowl, combine the flour, cornstarch, sugar, baking powder, and salt. Whisk well.
  3. Then mix in the milk, eggs, melted butter and vanilla. Stir until the mixture is very smooth.
  4. Once the waffle maker is very hot, add approximately ½ cup batter (for a large Belgium-style waffle) and cook for 3 ½ minutes undisturbed.
  5. Open and remove the waffle when the exterior is golden-brown. Move the waffle to the warm oven and repeat with the remaining batter.
  6. Once all the waffles are cooked, let them rest in the oven for another 5 minutes to continue to dry and crisp.

Notes

  • Use the warm oven with a rack to dry waffles after cooking for extra crispness.
  • This recipe yields about 6 large Belgium-style waffles or 8 to 10 smaller waffles.
