Crispy Zucchini Fritters Recipe
Description
The preparation starts by shredding zucchini and squeezing out excess moisture to prevent soggy fritters. The zucchini is mixed with beaten egg, all-purpose flour, ricotta, parmesan, chopped chives and parsley, and seasoned with salt and pepper. Large spoonfuls of this batter are pan-fried in oil over medium-high heat until each side is golden brown and crisp. After frying, fritters are drained briefly on a paper towel-lined plate to remove excess oil.
The accompanying dill sauce is made by combining plain yogurt with lemon juice, minced garlic, and dill, seasoned to taste. This sauce adds brightness and a cool contrast to the warm fritters. The balance of dairy-based cheeses and fresh herbs in the fritters complements the tangy yogurt sauce.
These zucchini fritters offer a combination of creamy, cheesy interior and crunchy edge from frying, making them versatile for snacks, sides, or light meals. They showcase a way to use zucchini that highlights texture and fresh herb flavor.
