Description

The casserole starts by browning lean ground beef together with diced bacon, onion, and minced garlic. Flour is sprinkled over the mixture, then milk, Worcestershire sauce, and optional hot sauce are added and thickened to form a creamy gravy base. Sharp cheddar cheese melts into the sauce before folding in mixed frozen vegetables and sour cream for added creaminess.

Tater tots form the base and top layers inside the slow cooker, with the meat and cheese gravy poured between. Cooking on low heat for 3 to 3.5 hours melts the cheese, cooks the vegetables through, and softens the tater tots into a golden, tender topping. Adding extra cheddar on top in the last 10 minutes provides an additional cheesy finish.

This casserole serves as a filling comfort food meal suitable for potlucks or family dinners. Its mix of ground beef, bacon, and tater tots recreates cheeseburger flavors and textures in an easy, hands-free slow cooker format.

  • 2 pounds ground beef lean
  • 10 Bacon diced, strips
  • 1 onion diced, small
  • 4 cloves garlic minced
  • cup all-purpose flour
  • 3 cups milk
  • 1 Tablespoon Worcestershire sauce
  • hot sauce optional, dash of
  • 3 cups cheddar cheese plus a little extra for topping if desired
  • 12-16 ounces mixed vegetables frozen bag
  • ¼ cup sour cream
  • salt to taste
  • black pepper to taste
  • 32 ounces tater tots frozen, bagged

Instructions

  1. In a large skillet brown ground beef, bacon, onion and garlic over medium heat until beef is no longer pink.  Sprinkle the flour over the ground beef and stir well to combine.  Stir in the milk, Worcestershire sauce and hot sauce.  Cook for 2-3 minutes or until thickened.  Remove from heat and stir in the cheddar, frozen vegetables and sour cream. 
  2. Spray the crock pot with non-stick spray.  Place some tater tots in the bottom of the crock pot.  Pour meat gravy over tater tots.  Arrange remaining tater tots on top.  Cover and cook on LOW for 3-3 1/2 hours.  In the last 10 minutes of cooking sprinkle with extra cheddar if desired.  Cover and finish cooking.  

Notes

  • When substituting cream soups, omit flour, milk, Worcestershire sauce, and sour cream; add two cans of cream soup for full recipe.
  • To make a smaller portion, halve all ingredients except for the tater tots, which remain the same.
  • For oven preparation, bake layered dish at 350°F for 35-40 minutes until tater tots reach desired crispness.
