Description

This soup begins with rinsed dry black beans placed in a crock pot along with minced garlic, diced onion, celery, peeled carrots, and salsa. Chili powder and cumin season the mixture, supported by vegetable or chicken broth and water. As the soup cooks on high for 6 to 8 hours, the beans soften thoroughly.

About an hour before serving, canned diced tomatoes are stirred in and some beans are mashed gently in the pot to thicken the soup's texture. The result is a hearty, creamy base with tender bean and vegetable pieces providing body.

This black bean soup can be served as a standalone meal or paired with toppings such as sour cream, cilantro, or diced avocado to complement its flavors. Leftovers keep well refrigerated for up to five days, making it practical for batch cooking.

  • 2 tsp garlic minced
  • 1/2 onion diced
  • 2 celery diced, stalks
  • 2 carrot peeled and diced, medium
  • 1 lb black beans rinsed, dry, uncooked
  • 1 cup salsa
  • 1 Tbsp chili powder
  • 1/2 tsp cumin
  • 4 cups vegetable broth (or chicken broth)
  • 2 cups water
  • 1 15 oz diced tomatoes 15 ounces, canned

Instructions

  1. Rinse the dry black beans under cold water and remove any debris from the beans.  
  2. Place the beans in a crock pot.  Top with the garlic, onion, celery, carrots, salsa, chili powder, cumin, dried oregano, chicken broth and water.  
  3. Cover the crock pot with lid, and cook on high for 6-8 hours until the beans are very soft.  
  4. ServeIn the last hour of the cooking time, mix in the can of diced tomatoes and stir to combine.
  5. Use a potato mash to gently mash some of the beans in the crock pot to thicken the sauce.  
  6. Then serve with your favorite toppings and enjoy!  

Notes

  • Store leftovers in an airtight container and refrigerate for up to five days.
