Description
This recipe uses boneless chicken thighs cooked in a slow cooker for convenience and deep flavor development. The sauce ingredients combine elements of sweetness from brown sugar and honey, tanginess from apple cider vinegar and ketchup, and umami from soy sauce, with aromatics like garlic, ginger, and optional red pepper flakes adding complexity.
After cooking the chicken until tender, it is removed, and the sauce is thickened with a cornstarch slurry to form a glossy coating. The chicken is then returned to the sauce to absorb the thickened flavors. The dish pairs well with plain rice or steamed vegetables, letting the sauce carry the meal.
Leftover sauce can also be thickened on the stove if preferred. Bourbon can be substituted with apple juice for a non-alcoholic alternative. Store leftovers in an airtight container for up to five days.
Ingredients
- 3 pounds chicken thigh boneless
- 1 Tablespoons cornstarch
Sauce Ingredients:
- 1/4 teaspoon ground ginger
- 1 Tablespoon garlic minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon black pepper
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 3 Tablespoons apple cider vinegar
- 1/4 cup bourbon
- 3 Tablespoons brown sugar
- 2 Tablespoons honey
Instructions
- Place the chicken thighs in a 6 quart crock pot.
- In a medium sized bowl, whisk together the sauce ingredients. Then pour this mixture over the chicken in the crock pot.
- Cover and cook on low for 6-7 hours or on high for 3-3 1/2 hours until the chicken is cooked through and tender.
- Remove the chicken. Cut it into bite size pieces and set it aside.
- Whisk the cornstarch with 3 tablespoons of cold water. Whisk this mixture into the sauce in the crock pot.
- Cover and cook on high for 20 minutes until the sauce thickens. Stir the chicken back into the crock pot.
- Serve over rice and enjoy!
Notes
- The sauce can be thickened on the stovetop by heating with cornstarch slurry before returning to the crock pot.
- Store leftovers in an airtight container for up to five days in the refrigerator.
- Apple juice can be used in place of bourbon to avoid alcohol.
