Crock Pot Cheesy Potato Casserole Recipe
Description
This recipe mixes frozen shredded hash browns with creamy ingredients like sour cream, cream of chicken soup, and milk. Cheddar cheese is added both inside the mixture and on top before slow cooking in a crock pot. The slow cooker's gentle heat softens the potatoes while blending the dairy and cheese into a cohesive, cheesy casserole. Optionally, diced onions can be included to add mild sharpness and texture contrast.
The final casserole is rich and creamy, with melted cheese binding the potato mixture into a moist but stable dish. The slow cooking process eliminates any raw potato taste and allows flavors to harmonize. It keeps well warm and is easy to serve alongside meats or as part of a buffet.
Leftover casserole can be stored covered in the refrigerator for up to a week. Reheating with a small amount of melted butter helps restore moisture and keep the casserole creamy rather than drying out.
Ingredients
- 1 package hash browns 28 oz.) Shredded, frozen
- 1 can cream of chicken soup (10.5 oz.)
- 1 cup milk
- ½ onion Chopped (Optional)
- 2 cups cheddar cheese shredded
- 8 oz. sour cream
Instructions
- Spray the inside of a 6 quart crock pot with non stick cooking spray.
- Break up the frozen hash browns in the bag.
- In a large bowl, whisk together the cream of chicken soup, milk and sour cream.
- Stir in the hash browns, onions and 1 cup of the shredded cheese.
- Pour this mixture into the crock pot and top with the remaining shredded cheese.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours.

Notes
- Frozen shredded hash browns can be substituted for diced or hash browns mixed with green peppers and onions if preferred.
- Store any leftovers in an airtight container in the refrigerator for 5 to 7 days.
- When reheating, add a small amount of melted butter on top to retain moisture and improve texture.
