Crock Pot Chicken and Stuffing
Description
The recipe begins by combining dried stuffing cubes, diced vegetables, cream of chicken soup, and broth in the slow cooker, then seasoning with ground sage. The boneless, skinless chicken breasts are placed on top and seasoned with salt and pepper. Cooking on low heat for about 4.5 hours allows the chicken to cook through and the stuffing to hydrate and absorb flavors without becoming overly watery or dry due to the chicken placement.
After cooking, the chicken is shredded or sliced and stirred into the stuffing mixture creating a cohesive one-dish meal with a balance of textures—moist, flavorful stuffing and tender chicken pieces.
This comforting dish is ideal for easy meal preparation and serves well as a standalone hearty entree for family dinners.
Use of larger dried stuffing cubes like Pepperidge Farm is recommended to maintain texture; smaller stove top stuffing mixes may not hold up as well. The chicken on top technique is important to avoid uneven stuffing texture during slow cooking.
Ingredients
- 14 ounces stuffing cubes dried, seasoned
- 1 medium sweet onion diced
- 1/2 cup celery diced
- 20 ounces cream of chicken soup
- 1/2 cup chicken broth
- 1/2 teaspoon sage ground
- 1 1/2 pounds chicken breast boneless, skinless
- 1/2 teaspoon salt more to taste
- 1/2 teaspoon black pepper more to taste
Instructions
- Spray a slow cooker with non-stick spray.
- Add the stuffing mix, onion, celery, cream of chicken soup, and chicken broth to the slow cooker and stir to combine.
- Sprinkle the sage over the top.
- Lay the chicken breasts on top of the stuffing mixture and season with salt and pepper.
- Cover and cook on low for 4 hours 30 minutes or until chicken cooks through.
- Shred the chicken with two forks or remove to a cutting board and slice into small pieces.
- Stir everything together and serve.
Notes
- Use larger dried stuffing cubes (e.g., Pepperidge Farm) for better texture; smaller mixes can become mushy.
- Placing chicken on top of the stuffing prevents mushy bottom and dry top layers.
- If using homemade cream of chicken soup, double the recipe amount for this dish.
