Description
The casserole assembles with chicken pieces at the bottom, topped optionally with shredded cheddar cheese and green beans, then covered by a mixture of cream of chicken soup combined with one package of stuffing mix and water, spiced with onion flakes if desired. A second package of dry stuffing mix is sprinkled over the top to form a textured topping.
Cooking on high for 2-3 hours or low for 4-5 hours allows the chicken to become tender and stuffing to absorb moisture and crisp on top. Ingredients
- 2 pounds chicken thighs cubed, or chicken breast
- 1 can (14.5 oz) green beans
- 2 cans (14 oz) cream of chicken soup
- 2 boxes chicken stuffing mix
- 1 ½ cups water

Options
- ¾-1 cup cheddar cheese shredded
- 1 tablespoon onion flakes
Instructions
- Prepare crock pot with cooking spray. Place the chicken pieces in the bottom of the crockpot, sprinkle cheese, if desired, then add the green beans.
- Combine the chicken soup, a package of stuffing mix and the water. Add onion flakes, if desired.
- Spread over the chicken, then sprinkle with the remaining package of stuffing mix.
- Place the lid on the crockpot and set on high for 2 to 3 hours or low for 4 to 5 hours.
- You can add a sprinkle of parsley before serving.
Notes
- Spray the slow cooker with cooking spray to prevent sticking of chicken and stuffing.
- Use uncooked dry stuffing mix as called for; do not pre-cook it before adding to the crock pot.
- Season the chicken with salt and pepper before adding to the crock pot to improve flavor.
