Crock pot Chicken and Wild Rice Soup Recipe

Report
This Crock Pot Chicken and Wild Rice Soup combines chicken breast, diced vegetables, herbs, and a blend of wild and brown rice slow-cooked in chicken broth. The long cooking time melds flavors, tenderizes the chicken, and results in rice cooked through in a savory broth. The seasoning includes thyme and bay leaf for earthy undertones, along with salt and pepper, enhancing the natural flavors.

Description

The soup starts by combining chicken breasts with diced onion, chopped carrots and celery, minced garlic, and seasonings such as salt, pepper, thyme, and a bay leaf in a slow cooker. Chicken broth is added to provide a rich base, with a mixture of wild and brown rice included raw. The slow cooking on low heat for 4 to 6 hours allows the chicken to cook gently until tender and shreddable while also cooking the rice fully to a pleasant texture.

Once the chicken is cooked, it is shredded directly in the pot and reincorporated, spreading the meat evenly throughout the soup. The broth is flavorful but mild, with herbal notes from thyme and a subtle background from the bay leaf. The combination of wild and brown rice provides a hearty texture and nutty flavor, complementing the chicken and vegetables.

The soup is hearty and suitable for cooler days or as a comforting meal. The crock pot method allows for convenient preparation with minimal active cooking time, making it practical for slow-cooked meals.
