Crock Pot Chicken and Zucchini Recipe is a simple slow cooker meal that is frugal and tasty. Give this healthy recipe a try for a dinner everyone will love.

Ingredients
- 3 boneless skinless chicken breasts
- 1 onion (diced)
- 1 jar marinara sauce (24 ounces)
- 2 teaspoons minced garlic
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 zucchini (sliced and cut in half)
- 2 cups shredded Parmesan cheese
Instructions
- Place the chicken breasts in the bottom of a crock pot. Season it with the salt, pepper, Italian seasoning and minced garlic. Top with the diced onions.
- Pour the marinara sauce on top of the chicken.
- Cook on low for 5-7 hours or on high for 2.5-3.6 hours until the chicken is cooked through (internal temperature of 165 degrees F).
- Stir in the sliced zucchinis. Cover and cook on high for 60 minutes until the zucchinis are tender.
- Top the meal with the shredded parmesan cheese. Cover and cook on low until the cheese is melted.
- Then the chicken is ready to serve and enjoy!
Notes
- We love serving this over pasta.
- Refrigerate the leftovers in an airtight container for up to 5 days.
