Crock Pot Chicken Tortellini Soup Recipe
Description
This recipe starts by layering diced carrots and celery, minced garlic, whole boneless chicken breasts, dried basil, oregano, thyme, salt, and pepper in a slow cooker with chicken broth. The ingredients cook on low heat for eight hours, allowing flavors to meld and the chicken to become tender.
After cooking, the chicken is removed and shredded back into the crock pot. Cheese tortellini is stirred in during the last 30 minutes to soften and absorb some broth, giving the soup body and richness. The combination of vegetables, herbs, and pasta results in a well-rounded flavor and texture profile.
Serving the soup with fresh parsley adds freshness and color. This soup works well as a simple lunch or light dinner, providing warmth and nourishment without fuss.
