Crock Pot French Onion Chicken
Description
The Crock Pot French Onion Chicken recipe starts with a base of peeled, sliced Vidalia onions that develop sweetness during slow cooking. Chicken breasts, filleted into pieces, are seasoned with salt and dried thyme before being placed over the onions. Balsamic vinegar and beef broth are poured over everything, contributing acidity and depth as the ingredients cook low and slow for several hours.
The slow-cooking method makes the chicken tender and allows the onion mixture to become richly caramelized. Swiss cheese slices are added during the final 30 minutes to melt atop the chicken, adding a smooth, slightly nutty layer that complements the savory flavors below.
This dish serves well as a warm entree accompanied by simple sides, highlighting the combination of sweet onions, savory chicken, and melted cheese. It suits a leisurely cooking approach where ingredients merge over time to build flavor and texture.
Leftovers can be kept in an airtight container in the refrigerator for 5-7 days. Sweet onions other than Vidalia can be substituted if necessary without altering the essence of the dish.
