Crock Pot Frito Chili Pie
Description
Ground lean beef is combined with diced onion, tomato sauce, crushed tomatoes, garlic salt, chili powder, cumin, black pepper, and beef broth in a crock pot and cooked on low for 6-8 hours or on high for 3-4 hours. This long cooking time allows the flavors to meld and the beef to become tender. Breaking up the meat in the last hour ensures an even texture. To serve, the chili is spooned over Frito corn chips, then topped with shredded cheddar cheese which melts partially from the heat, creating a contrast between the crunchy chips and the rich, spiced chili.
The dish balances the savory meat and spice warmth with the acidity from tomatoes and the crunch and saltiness of the corn chips. The shredded cheese adds creamy richness that contrasts with the spicy chili and crispy base. This makes for a satisfying and texturally interesting casual meal or party dish.
The chili pie is great for game day, casual lunches, or easy dinners. It can be served alone or with common chili toppings like sour cream, diced red onions, or sliced jalapeños to add further flavor or cooling contrast.
Leftover chili can be refrigerated and reheated; keeping the chips separate until serving preserves their crunch. Using lean beef reduces fat content while still giving a hearty texture. Adjust seasonings to taste and add preferred toppings to customize the dish.
