Hearty crock pot hamburger soup is packed with veggies and flavor. Best of all, it's made in the slow cooker with minimal effort.

Ingredients
- 2 carrots, peeled and sliced
- 4 potatoes, peeled and diced
- 2 cups water
- 1 pound ground beef
- 1 (14-ounce) can beef broth
- 1 (12-ounce) can diced tomatoes, drained
- 2 tablespoons sugar
- 1 (11-ounce) can corn, drained
- 1 tablespoon taco seasoning
- 1 cup grated mozzarella or parmesan cheese
- salt and pepper to taste

Instructions
- Add carrots, potatoes, and water to your crock pot. Cook on low for 3-4 hours (or HIGH for 1½-2 hours).
- Brown the ground beef in a skillet and add to the crock pot along with the diced tomatoes, beef broth, sugar, corn, and taco seasoning. Cook on low for another hour or HIGH for 30 more minutes. Add salt and pepper to taste and 1 cup of grated cheese a few minutes before serving. ENJOY!
Notes
- Store leftovers in airtight containers in the fridge for 3-4 days, or freeze for 4-6 months. Reheat in the microwave or on the stovetop.
