  • 2 carrot peeled and sliced
  • 4 potato peeled and diced
  • 2 cups water
  • 1 pound ground beef
  • 1 (14-ounce) can beef broth
  • 1 (12-ounce) can tomato drained, diced
  • 2 tablespoons sugar
  • 1 (11-ounce) can corn drained
  • 1 tablespoon taco seasoning
  • 1 cup mozzarella or parmesan cheese, grated
  • salt to taste
  • black pepper to taste

Instructions

  1. Add carrots, potatoes, and water to your crock pot. Cook on low for 3-4 hours (or HIGH for 1½-2 hours).
  2. Brown the ground beef in a skillet and add to the crock pot along with the diced tomatoes, beef broth, sugar, corn, and taco seasoning. Cook on low for another hour or HIGH for 30 more minutes. Add salt and pepper to taste and 1 cup of grated cheese a few minutes before serving. ENJOY!

Notes

  • Store leftover soup in airtight containers in the refrigerator for up to 4 days or freeze for 4 to 6 months.
