Crock Pot Honey Garlic Chicken Thighs
Description
Chicken thighs are placed at the bottom of a 6-quart slow cooker. A sauce combining minced garlic, honey, ketchup, low sodium soy sauce, and dried oregano is whisked together and poured over the chicken. Cooking on low for 5 hours (or high for 3 to 4 hours) allows the chicken to absorb the sweet, tangy, and umami flavors while becoming tender.
In the final cooking phase, a mixture of cornstarch and cold water is stirred into the crock pot to thicken the sauce, giving it a glossy, clingy texture. Once thickened, the chicken is served immediately, garnished with sesame seeds that add a nutty accent and mild crunch.
This recipe is practical for meal prepping as leftovers can be stored up to 5 days in airtight containers in the refrigerator. The tender chicken pairs well with rice or steamed vegetables to balance the rich sauce. Simple ingredients create a hands-off meal with an effective balance of sweetness from honey and depth from soy sauce and garlic.
Ingredients
- 12 chicken thighs boneless skinless
- 1 Tablespoon garlic minced
- 1/2 cup honey
- 1/2 cup ketchup
- 2/3 cup soy sauce low sodium
- 1 teaspoon oregano dried
- 2 tbsp cornstarch
- 1/4 cup water cold
- 1 tablespoon sesame seeds for topping
Instructions
- Place the chicken thighs in the bottom of the crock pot. I used a 6 quart slow cooker.
- In a mixing bowl, combine garlic, honey, ketcup, soy sauce, and oregano. Whisk until combined.
- Pour the sauce over the chicken thighs.
- Add the lid and cook on low for 5 hours or high 3 to 4 hours. Whisk the cornstarch and cold water together in a small bowl. Sitr this mixture into the crock pot for the last hour of the cooking time if cooking on low or the last 30 minutes if cooking on high.
- Serve immediately and spoon sauce over the chicken. Sprinkle with sesame seeds.
Notes
- Leftovers keep well refrigerated in an airtight container for up to 5 days.
- Use low sodium soy sauce to control saltiness in the sauce.
- The cornstarch slurry added near the end thickens the sauce for a sticky glaze.
- Sesame seeds garnish adds texture; optional but recommended.
