Crock Pot Italian Bean Soup
Description
This soup begins by browning Italian sausage and diced onion to develop savory depth, which is added to beans and broth in a slow cooker. The beans soak and cook over several hours until soft, allowing flavors to meld.
Later ingredients like diced tomatoes, zucchini, seasoning packet, marinara sauce, and red wine vinegar are incorporated toward the end to retain the vegetables’ texture and brightness while adding acidity to balance the dish. The resulting soup is thick and full-bodied, with tender beans, slightly softened vegetables, and a spiced Italian flavor.
Optional toppings such as shredded Parmesan and fresh chopped parsley or basil add freshness and umami bite. Serving with garlic bread complements the robust soup well.
You can substitute ground beef for sausage if preferred. It is important to add acidic ingredients only after beans are softened to avoid toughening. Thin slicing of zucchini ensures it cooks through evenly in the last cooking stage.
Ingredients
- 1 package 15 bean soup with seasoning packet, HamBeens brand
- 1 pound Italian sausage mild or spicy
- 1 large onion diced

- 1 zucchini sliced ⅛-inch thick
- 1 cup marinara sauce or pasta sauce
- 1 teaspoon red wine vinegar
For Serving
- Parmesan Cheese shredded

Instructions
- Rinse beans and drain. Sort any unwanted debris and set seasoning packet aside.

- Place beans, sausage & onion, broth, red pepper, garlic, and Italian seasoning in a 6qt slow cooker.
- Cook on high 5 hours (or low for 7-8) or until beans are tender.
- Once beans are soft stir in diced tomatoes, zucchini, seasoning packet, marinara sauce, and red wine vinegar. Cook for additional 45-50 minutes or until zucchini is tender.

Notes
- Ground beef can replace sausage as an alternative protein.
