  • 1 kielbasa sausage 14 ounce package, sliced into 1/2-inch rounds
  • 1 1/2 pounds potato pre-diced
  • 1 onion diced, large
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1/4 cup Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon thyme dried
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a 6-quart crock pot, combine the sliced kielbasa sausage, pre-diced potatoes, diced onion, and minced garlic.
  2. In a separate bowl, whisk together the broth, Dijon mustard, honey, dried thyme, salt, and pepper until well combined.
  3. Pour the broth mixture over the kielbasa and potatoes in the crock pot, stirring gently to distribute the liquid evenly.
  4. Cover the crock pot and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the
  5. potatoes are tender and the flavors have blended together.

Notes

  • Ore-Ida Diced Hash Brown Potatoes is what I used for this recipe or Simply Potatoes Diced Potatoes will work great as well.  
  • If you want to use fresh potatoes, dice them into 1/2-inch cubes and increase the cooking time by 1-2 hours on low or 30-60 minutes on high.
  • Refrigerate the leftovers in an airtight container for up to 5 days.
