Crock Pot Marry Me Chicken
Description
This slow cooker recipe starts by browning chicken breasts before placing them in a crock pot with a mixture of chicken broth, flour, garlic, Italian seasoning, paprika, sun-dried tomatoes, and butter. The chicken cooks slowly on low for 6-7 hours or high for 3-3.5 hours, allowing the flavors to meld and meat to become tender. Heavy cream is stirred in near the end to enrich the sauce.
The creamy, savory sauce balances Italian herbs with the tang and sweetness of sun-dried tomatoes and the richness of butter and cream. Serving this dish over pasta makes for a filling and satisfying meal. Garnishing with fresh basil and grated Parmesan cheese adds freshness and umami depth.
Leftovers can be refrigerated in airtight containers for up to 5 days. Boneless, skinless chicken thighs may be substituted for breasts. This recipe suits cooks who want a hands-off, slow-cooked, creamy chicken entree.
Ingredients
- 6 chicken breast boneless skinless
- 2 Tablespoons olive oil
- 1 ½ cups chicken broth
- 3 Tablespoons all-purpose flour
- 1 cup heavy whipping cream
- 1 Tablespoon garlic minced
- ½ teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/3 cup tomatoes drained, sun dried
- 2 Tablespoons butter salted
- basil optional for garnish, fresh
- Parmesan Cheese optional for garnish, grated
Instructions
- Heat the olive oil in a large skillet over medium high heat. Brown the chicken breasts in the oil for 2-3 minutes per side.
- In a small mixing bowl, whisk together the chicken broth and flour. Add this mixture to a crock pot. Add in the minced garlic, salt, pepper, Italian seasoning and paprika. Gently mix to combine these ingredients.
- Place the chicken breasts in the crock pot and top the chicken with the sun dried tomatoes and butter. Cover and cook on low for 6-7 hours or on high for 3-3.5 hours until the chicken is cooked through. Stir the heavy whipping cream into the crock pot for the last 60 minutes if cooking on low or 30 minutes if cooking on higher.
- Serve warm over pasta topped with the fresh basil and grated parmesan cheese. Enjoy!
Notes
- Store leftovers in airtight containers refrigerated up to 5 days for best freshness.
- Boneless, skinless chicken thighs can be used as a substitute for chicken breasts if preferred.
