Crock Pot Marry Me Chicken

Crock Pot Marry Me Chicken slow-cooks boneless, skinless chicken breasts in a creamy sauce made from chicken broth, heavy cream, garlic, and Italian seasonings, enriched with sun-dried tomatoes and finished by stirring in Parmesan cheese. The sauce thickens due to cornstarch, resulting in a rich, flavorful dish that can be served over rice, pasta, or mashed potatoes and garnished with fresh basil.

Description

This recipe features chicken breast or tenderloins layered in a slow cooker with a mixture of chicken broth and cornstarch to thicken the sauce during cooking. Heavy cream adds richness, while minced garlic and Italian seasoning contribute savory aromas and flavor depth. Sun-dried tomatoes provide bursts of concentrated tomato flavor and slight tang.

Cooked on high for 3 to 4 hours or low for 6 hours, the chicken absorbs the flavors as the sauce thickens around it. Butter adds silkiness, and Parmesan cheese stirred in at the end rounds out the dish with a cheesy finish. The preparation requires no additional steps outside the slow cooker, simplifying the process.

Serving suggestions include pairing with grains or mashed potatoes to balance the creamy chicken. Fresh basil garnish adds herbaceous brightness when served.
