Crock Pot Meatloaf Recipe
Description
The recipe starts with mixing ground turkey with eggs, bread crumbs, ketchup, onion, salt, and pepper to bind and season the meat. The shaped loaf is placed in a slow cooker along with baby carrots and diced potatoes tossed in olive oil and salt, allowing the vegetables to cook alongside the meatloaf.
The slow cooking method gently cooks the loaf until the meat reaches a safe internal temperature while keeping it moist, and the vegetables become tender. The optional ketchup glaze on top adds sweetness and color. Alternative oven baking instructions are provided for those who prefer that method.
The meatloaf makes a wholesome meal served with the cooked vegetables. Leftover meatloaf slices can be used in sandwiches, expanding the meal's utility. Leftovers store well in the refrigerator or can be frozen for longer preservation.
Proper mixing avoiding overworking the meat helps maintain a tender texture. Optional broiling after cooking enhances the glaze.
Ingredients
- 1 lb turkey JENNIE-O® brand
- 2 egg
- 1 c. panko bread crumbs
- 1/2 c. ketchup plus more to top meatloaf
- 1/2 c. onion chopped
- 1 1/2 tsp salt divided
- 1/2 tsp black pepper
- 1 Tbsp olive oil
- 1 lb carrot baby
- 1 1/2 lb potato cleaned and diced
Instructions
- Spray inside of crock pot with non-stick cooking spray.
- In a large bowl mix together turkey, eggs, bread crumbs, ketchup, onion, 1 tsp salt and pepper. Form a loaf and place inside the slow cooker, making sure the meatloaf is not touching the sides.
- In a bowl mix together the carrots, potatoes, 1/2 tsp salt and olive oil. Place around the meatloaf in crock pot. Top meatloaf with ketchup if desired.
- Cook on high 4 hours or low 7-8 hours or until veggies are cooked through and meatloaf's internal temperature is 165 degrees.
Notes
- Oven baking alternative: bake meatloaf in a loaf pan at 350°F for about 55 minutes, topping with ketchup for a moist result.
- Ground beef can substitute for turkey; choose 90% lean beef for similar texture.
- The meat mixture can be prepared and refrigerated up to 12 hours before cooking.
- Mix ingredients gently to avoid tough meatloaf texture.
- Adding a bit of brown sugar to the ketchup glaze enhances sweetness.
- Broil the meatloaf after cooking to create a sticky, flavorful glaze on top.
- Leftovers keep in the fridge for 3 days or can be frozen for up to 2 months.
- Meatloaf internal temperature should reach 160°F to ensure doneness.
- Leftover meatloaf works well for sandwiches when warmed and paired with hearty bread.
