  • 1 pound pinto beans dry
  • ½ yellow onion finely diced
  • 2 teaspoons salt
  • 1 tablespoon garlic minced
  • 2 bay leaf
  • 1 teaspoon cumin ground
  • 1 teaspoon oregano dried
  • 2 cups water
  • 4 cups chicken broth low sodium

Instructions

  1. Rinse the dry beans in a colander and remove any damaged beans or any debris from the package.  Then place the beans in a 6 quart crock pot.
  2. Add the remaining ingredients to the crock pot.  Stir to combine all the ingredients.
  3. Cover and cook on low for 8-10 hours or on high for 4-5 hours until the beans are tender. Each slow cooker runs differently so adjust the cook time based on your slow cooker.  Remove the bay leaves from the crock pot.
  4. Serve warm with your favorite toppings and enjoy!

Notes

  • Soaking the beans is not necessary when cooking them in a crock pot.
  • Store leftover beans in an airtight container in the refrigerator for up to one week.
  • Beans freeze well for up to three months, making them suitable for batch cooking.
