Crock Pot Poor Man's Stew

Report
Crock Pot Poor Man's Stew combines ground beef with diced potatoes, carrots, onions, and canned tomatoes simmered in beef broth with Italian seasoning. This slow-cooked stew delivers hearty, comforting flavors with tender vegetables and seasoned meat. It’s an easy, filling meal prepared with minimal hands-on time.

Description

This recipe uses browned ground beef as its base, combined with chunky russet potatoes, sliced carrots, and diced onions in a crock pot. A mixture of canned diced tomatoes, beef broth, Italian seasoning, garlic, onion powder, salt, and pepper creates a flavorful cooking liquid that melds with the ingredients over hours of slow cooking. The long, gentle simmer ensures the vegetables soften while absorbing the savory broth.

The result is a classic stew with tender potatoes and flavorful beef chunks in a seasoned, tomato-rich broth. It’s a straightforward and economical comfort food suitable for colder days or anytime a warm meal is desired. Serving it warm with bread or alone, the stew makes a filling and uncomplicated dinner option.

Leftover stew keeps well when refrigerated in a sealed container for up to five days and can be reheated gently. As a variation, chicken broth can substitute beef broth without drastically changing the overall flavor profile.
