Crock Pot Poor Man's Stew
Description
This recipe uses browned ground beef as its base, combined with chunky russet potatoes, sliced carrots, and diced onions in a crock pot. A mixture of canned diced tomatoes, beef broth, Italian seasoning, garlic, onion powder, salt, and pepper creates a flavorful cooking liquid that melds with the ingredients over hours of slow cooking. The long, gentle simmer ensures the vegetables soften while absorbing the savory broth.
The result is a classic stew with tender potatoes and flavorful beef chunks in a seasoned, tomato-rich broth. It’s a straightforward and economical comfort food suitable for colder days or anytime a warm meal is desired. Serving it warm with bread or alone, the stew makes a filling and uncomplicated dinner option.
Leftover stew keeps well when refrigerated in a sealed container for up to five days and can be reheated gently. As a variation, chicken broth can substitute beef broth without drastically changing the overall flavor profile.
