Description

This recipe places a pork loin in a crock pot with a mixture of sliced onions, minced garlic, soy sauce, brown sugar, lime juice, chicken broth, ground ginger, dried thyme, salt, and black pepper poured over it. Cooking on low for four to six hours or on high for two to three hours tenderizes the meat to an internal temperature of 165°F. After cooking, the pork is sliced to serve.

A gravy is prepared by whisking cornstarch with cold water and heating the strained cooking liquid separately until thickened. The gravy is poured over the pork slices, enriching the dish with a flavorful sauce that carries the seasoning elements.

  • 4 pound pork loin fat trimmed
  • 1/2 white onion (thinly sliced)
  • 1 Tablespoon garlic minced
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon thyme dried leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 cup chicken broth
  • 2 lime juiced, fresh
  • 3 tablespoons cornstarch
  • 3 tablespoons water cold

Instructions

  1. Place the pork loin in the crock pot fat side up. 
  2. In a small bowl mix all the other ingredients except the corn starch. Pour over the pork loin.
  3. Top the roast with the sliced onions and garlic. 
  4. In a small mixing bowl, whisk together the ground ginger, thyme leaves, salt, pepper, soy sauce, brown sugar chicken broth and lime juice. 
  5. Pour this mixture on top of the roast in the crock pot.  
  6. Cover and cook on low for 4-6 hours or on high for 2-3 hours until the pork roast reaches an internal temperature of 165 degrees Fahrenheit. 
  7. Remove and slice the pork loin.
  8. Meanwhile in a small bowl whisk 3 tablespoons of cornstarch with the cold water.
  9. Pour the sauce from the crock pot into a small pan. Heat over medium high heat. 
  10. Whisk the cornstarch mixture into the cooking liquid.
  11. Cook over medium heat until the sauce thickens (1-2 minutes).  
  12. Serve the sliced pork roast with the gravy poured on top.  Enjoy! 

Notes

  • Cook pork loin on low for better flavor, but high heat for shorter time is acceptable.
  • Store leftovers in an airtight container in the refrigerator for up to five days.
