Description
This recipe uses red potatoes cleaned and diced, combined with olive oil, minced garlic, salt, black pepper, Italian seasoning, and grated Parmesan cheese, all thoroughly mixed in a crock pot. Cooking on high for four hours or low for eight results in tender potatoes infused with garlic and herbs, with a slight savory crust from the melted Parmesan. The slow cooker method allows the flavors to meld gently without needing attention, freeing time for other tasks.

Ingredients
- 3 lbs potato Cleaned and Diced, red
- 1/4 cup olive oil
- 1 Tbsp garlic minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1/3 cup Parmesan Cheese grated
Instructions
- Place the potatoes in a crock pot. I used a 4 quart crock pot but you can use a large one as well.
- Combine the olive oil, garlic, salt, pepper and Italian seasoning together in a small bowl.
- Pour this mixture over the potatoes in the crock pot.
- Pour the grated cheese over the top and stir to thoroughly coat the potatoes with the cheese,
- Cover and cook on high for 4 hours or on low for 8 hours.
- Serve warm and enjoy!
