Description
The recipe begins by placing chopped green bell pepper, onion, celery, minced garlic, rinsed red beans, Cajun seasoning, and a ham bone or ham hock into a crock pot with chicken broth. Ingredients
- 1 ham bone or ham hock
- 1 green bell pepper chopped

- 1 pound red bean rinsed and picked over, dried, small
- 6 cups chicken broth
- 14 ounces andouille sausage sliced, or smoked kielbasa
- 1 tablespoon liquid smoke
Instructions
- Place ingredients except sausage and liquid smoke into a crock pot.
- Cook on high for 6-8 hours, or until beans are tender.
- In the last 30 minutes, stir in sausage and liquid smoke.
- Remove the ham bone or ham hocks.
- If you want a thicker sauce, smash some of the beans, and stir back into the sauce.
- Serve over cooked white rice.
Notes
- For quicker prep, chop vegetables and mince garlic the night before cooking.
- Remove ham bone before serving to avoid serving unwanted bone pieces.
