Description

This Crock Pot Ribs recipe uses two racks of baby back ribs seasoned with a spice rub that includes paprika, brown sugar, garlic and onion powders, black pepper, lemon pepper, and salt. The silver membrane is removed to improve tenderness and allow the rub to penetrate. The ribs cook slowly in the crock pot along with sliced onion, garlic cloves, and water, which steams and softens the meat over 4 hours on high or 8 hours on low.

Once tender, the ribs are brushed with a homemade barbecue sauce mixture of ketchup, chili sauce, and commercial barbecue sauce, then placed under the broiler to develop a slightly charred, sticky glaze. This finishing step provides a contrast of texture and concentrated flavor on the exterior.

  • 2 racks baby back ribs about 3 to 4 pounds
  • 1 onion
  • 4 cloves garlic
  • ½ cup water
  • 2 to 3 tablespoons rib rub or homemade rib rub in the notes

BBQ Rib Sauce

  • ¼ cup ketchup
  • ½ cup chili sauce
  • ½ cup barbecue sauce of choice

Instructions

  1. If making homemade rub, combine all rub ingredients according to the recipe below.
  2. Remove silver membrane from the back of the ribs. Rub front and back of the ribs with spice mixture.
  3. Place onion, sliced garlic, water and ribs in a slow cooker.
  4. Cook ribs on high 4 hours or low 8 hours or until fork tender.
  5. Preheat broiler. Combine ketchup, chili sauce and barbecue sauce.
  6. Brush ribs with sauce mixture and broil (or grill) 3-5 minutes or until charred.

Notes

  • Remove the silver skin from ribs to increase tenderness and flavor absorption.
  • If using pre-made rib rubs, taste first and reduce amount if very salty.
  • Cooking time varies: 4 hours on high or 8 hours on low in the slow cooker.
  • Broil after saucing to caramelize and add texture to the ribs.
