Description
The recipe layers chicken breasts in the crock pot with a mixture of cream of mushroom soup, chicken broth, onion soup mix, dried thyme, black pepper, and sliced mushrooms. Slow cooking at low or high temperature gently cooks the chicken while infusing it with mushroom and seasoning flavors. Once cooked, the chicken is shredded into large pieces to increase surface area for the sauce.
A cornstarch slurry is stirred into the crock pot to thicken the liquid into a rich, smothering sauce. The final result is tender chicken pieces coated in a creamy mushroom sauce, ideal for serving with rice, mashed potatoes, or vegetables.
Leftovers keep well refrigerated for several days, making it suitable for meal prepping or batch cooking.
Ingredients
- 4 chicken breast boneless skinless
- 1 can cream of mushroom soup (10 ounces)
- 8 ounces mushroom sliced
- 1 packet onion soup mix
- 1 1/2 cup chicken broth
- 1/2 teaspoon thyme dried leaves
- 1/2 teaspoon black pepper
- 1 Tablespoon cornstarch
- 2 Tablespoons water cold
Instructions
- In a small mixing bowl, whisk together the cream of mushroom soup, onion soup mix, chicken broth, thyme and black pepper.
- Lay the chicken at the bottom of the crock pot. Top with the sliced mushrooms.
- Pour the sauce over the top of the chicken and top with the mushrooms.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the chicken from the crock pot and shred it into large pieces.
- Stir together the cornstarch and cold water in a small bowl.
- Stir this mixture into the crock pot and mix the chicken back into the sauce in the crock pot.
- Cover and cook on low for 20-30 minutes until the sauce thickens.
- Serve warm and enjoy!
Notes
- Store leftovers in an airtight container in the refrigerator for up to 5-6 days.
- Boneless, skinless chicken thighs can be used as a substitute for chicken breasts if preferred.
