Description
Crock Pot Steaks and Gravy starts by tenderizing cube steaks, which are then browned in bacon fat for flavor. Cooked bacon is set aside and the steak browned pieces are layered in a slow cooker with sautéed onions and mushrooms. Red wine and beef broth form a savory liquid base seasoned with garlic, thyme, rosemary, and bay leaf to infuse aroma and depth.
Cooking on low for 8–9 hours or high for 4–5 hours allows the meat to become tender and absorb the flavors of the broth and herbs. The gravy is thickened by stirring in a slurry of cornstarch and water near the end of cooking. Finally, crisp bacon slices are added to the gravy mixture just before serving to introduce a salty crunch.
This dish is suited for hearty dinners and pairs well with mashed potatoes, rice, or bread to sop up the rich gravy. The long cook time ensures the steak becomes tender enough to cut easily with a fork.
Suggested substitutions include chuck roast or stewing beef if cube steaks are unavailable. If the meat is not tender at recommended times, it should be cooked longer for optimal texture.
Ingredients
- 2 pounds cube steak round steaks, or minute steaks
- 6 lices Bacon
- 1 large onion sliced
- ½ cup red wine
- 2 cups beef broth
- 4 ounces mushrooms halved
- 1 tablespoon tomato paste
- 2 cloves garlic minced
- ½ teaspoon thyme dried leaves
- ½ teaspoon rosemary dried
- 1 bay leaf
- 2 tablespoons cornstarch
Instructions
- Pound the steaks using a meat tenderizer/mallet.
- Cook bacon until crisp. Remove bacon from the pan, leaving the fat in the bottom of the pan.
- Season the steaks with salt and pepper and brown in the bacon fat. Place in the bottom of a 6qt slow cooker.
- Add onions to the pan and cook 2-3 minutes or just until it softens. Place onions in the slow cooker. Add wine to the pan, scraping any brown bits off, and pour into the slow cooker.
- Add all remaining ingredients except bacon & cornstarch. Cook on low for 8-9 hours or on high for 4-5 hours.
- Remove bay leaf. Combine 2 tablespoons cornstarch with 2 tablespoons water. Stir into the slow cooker and cover. Cook 15 minutes or until thickened.
- Stir in bacon and serve immediately.
Notes
- Cube steak is recommended but chuck roast, stewing beef, or round steak can be used as alternatives suitable for slow cooking.
- Check the tenderness after cooking; if not tender, extend cooking time.
