Crock Pot Sweet Potato Casserole

This Crock Pot Sweet Potato Casserole cooks peeled sweet potatoes with butter, brown sugar, maple syrup, cinnamon, vanilla, and water until tender. The mashed sweet potatoes are mixed with beaten eggs and topped with a pecan and brown sugar crumb that bakes in the slow cooker for a crisp finish. The casserole offers a creamy, sweet interior with a buttery, crunchy topping, providing a comforting dish suited as a side or dessert.

Description

The Crock Pot Sweet Potato Casserole starts with cooking sweet potato chunks slowly on high heat along with melted butter, brown sugar, maple syrup, and warm spices like cinnamon and vanilla to infuse flavor. After the potatoes become tender, they are mashed together with lightly beaten eggs to add richness and help bind the mixture. A streusel topping made from brown sugar, flour, melted butter, and chopped pecans is sprinkled over the mashed potatoes.

The casserole is then covered and cooked further to allow the topping to crisp and form a crumbly texture contrasting the smooth sweet potato base. This slow cooker method provides a hands-off approach, resulting in a rich and sweet dish with a nutty, crunchy topping.

This casserole is suitable for serving alongside savory mains or as a warm dessert. It is best prepared in a 6-quart crock pot for capacity and even cooking, but the recipe can be halved for smaller slow cookers.

Using fresh sweet potatoes ensures texture integrity, though canned can be used if necessary. Consistently sized potato pieces promote uniform cooking. Allowing the casserole to rest before serving helps the topping stabilize.

  • 1/4 cup maple syrup
  • 1 1/4 teaspoons cinnamon
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup water
  • 2 egg lightly beaten
  • cooking spray

For the topping

  • 3/4 cup brown sugar packed
  • 1/2 cup flour
  • 6 tablespoons butter melted
  • 1 cup pecans chopped

Instructions

  1. Coat a 6 quart crock pot with cooking spray.
  2. Place the sweet potatoes, butter, brown sugar, maple syrup, cinnamon, vanilla extract and water in the crock pot. Stir to combine.
  3. Cover the pot, then cook the potatoes on high heat for 3-4 hours or until tender.
  4. Uncover the pot, let the potatoes cool slightly. Add the eggs and use a hand mixer or potato masher to mash the potatoes.
  5. In another bowl, mix together the streusel ingredients until coarse crumbs form. Sprinkle the crumb topping over the sweet potatoes.
  6. Cover and cook for 2 hours on high.
  7. Let stand for 5 minutes, then serve.

Notes

  • Use fresh sweet potatoes peeled and cut into uniform pieces for even cooking.
  • A 6-quart crock pot is recommended to accommodate the casserole fully; halve the recipe for smaller slow cookers.
  • Canned sweet potatoes can substitute fresh but ensure they contain no added sugar to avoid overly sweet results.
  • Let the casserole stand a few minutes after cooking before serving for better setting of the topping.
