Crock Pot Sweet Potato Stew

Report
Crock Pot Sweet Potato Stew combines tender stew meat, sweet potatoes, celery, carrots, and corn in a seasoned broth with fire-roasted diced tomatoes and spices. Slow cooking melds the ingredients into a hearty stew with balanced savory and sweet flavors, finished with fresh parsley for brightness. The dish offers a comforting, filling meal made with minimal active preparation.

Description

This stew uses cut stew meat and large chunks of peeled sweet potatoes cooked together with vegetables including celery, carrots, and corn in a base of canned fire-roasted diced tomatoes and beef broth. Spices such as paprika, black pepper, salt, and Worcestershire sauce contribute depth to the rich broth. The stew is assembled in a crock pot and cooked low and slow for 6 to 7 hours or on high for 3 to 4 hours to tenderize the meat and allow flavors to fully develop. Adding fresh parsley just before serving provides an herbaceous note to the finished dish. This method allows for a hands-off cooking process and creates a stew with contrasting textures between soft sweet potatoes and tender meat. The corn adds a slight crunch and sweetness, complementing the other ingredients.
