Crock Pot Taco Chili

This flavorful Crock Pot Taco Chili is a breeze to make in the slow cooker and is the perfect base for all your favorite taco night toppings!

Ingredients

  • 1 lb ground beef
  • 2 tsp avocado oil or olive oil
  • 1 yellow onion
  • 1 bell pepper
  • 1 jalapeño
  • 1 cup corn (frozen or canned)
  • 1 black beans drained and rinsed, canned
  • 28 oz crushed fire roasted tomatoes canned
  • ¼ cup salsa plus any extra to taste, favorite jarred
  • 1 TBSP chili powder
  • 2-3 tsp cumin ground
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt to taste
  • cayenne pepper to taste

TASTY TOPPING OPTIONS: choose your favorites

  • jalapeño sliced
  • sour cream or Greek yogurt
  • avocado or top it with guac!, sliced or cubed
  • Pico de Gallo fresh
  • tomato chopped
  • red onion pickled
  • cheddar cheese grated or Mexican-blend cheese
  • cilantro fresh
  • green onion chopped
  • corn chips Fritos brand or crispy tortilla chips

Instructions

  1. First prep the vegetables. Peel and dice onion. Remove stem/seeds from peppers with a spoon and dice. For a spicier chili, use the seeds from the jalapeño in the chili.
  2. Measure out remaining ingredients and open cans.

SLOW COOKER INSTRUCTIONS

  1. Add a little oil to a stainless steel or cast iron pan over medium-high heat and brown the ground beef, breaking the meat into crumbles while stirring.
  2. This is the fun part – add the cooked ground beef and everything but the toppings to the slow cooker. Mix it all up and secure the lid.
  3. Set slow cooker to HIGH for 4 hours or to LOW for 6-8 hours.

STOVE TOP INSTRUCTIONS

  1. Add a little oil to a large pot or dutch oven over medium-high heat. Brown the ground beef, breaking the meat into crumbles while stirring. Transfer to a bowl or plate and add a little more oil to the pan if needed.
  2. Sauté the onion for 4-5 minutes then add bell pepper, jalapeño, and corn. Season with chili powder, cumin, garlic powder and paprika. Mix well and sauté for a few minutes until fragrant.
  3. Next add the remaining ingredients (including the cooked ground beef) and increase heat until chili starts to boil. Stir and reduce heat to an active simmer. Cook covered for 20 minutes or until the veggies are tender and chili is fragrant and flavorful.

READY TO EAT?

  1. Stir well and give it a little taste test. Add salt and cayenne pepper (to taste) as well as any additional chili powder, garlic powder, or cumin desired. Extra salsa can be added as well!
  2. Portion into bowls and serve with rice, cornbread, or straight up with your choice of toppings. It's fabulous every which way! Enjoy!

  • Want your chili spicy? Go for it! Feel free to add extra jalapeño on top, use spicy salsa in place of regular, and you can also control the heat of the chili by adding ground cayenne pepper to season your chili.
