  • 2 (10 ounce each) can diced tomatoes with chilies such as Rotel, with juices
  • 1 (8 ounce each) can tomato sauce
  • 2 cups beef broth
  • 1 cup corn kernels frozen
  • 2 bell pepper red, yellow or green, diced
  • 1 (4 ounce each) can green chile with juices, mild
  • 1 jalapeño seeded and finely diced
  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • 1 teaspoon chili powder

Instructions

  1. Brown beef, onion, and garlic in a skillet over medium-high heat until no pink remains. Drain any fat.
  2. Place beef mixture in a 6qt slow cooker with remaining ingredients.
  3. Cook on low 6-8 hours or on high 3-4 hours or until veggies are tender.
  4. Serve with your favorite toppings.

Notes

  • To thicken the soup, whisk in cornmeal or cornstarch 10-15 minutes before serving.
  • Ground beef can be replaced with chicken breasts; cook longer until chicken is fully cooked, then shred and return to soup.
  • Top with sour cream, green onion, and cheddar cheese for added flavor and texture.
