Ingredients
- 1 pound ground beef lean

- 1 (8 ounce each) can tomato sauce
- 2 cups beef broth
- 1 cup corn kernels frozen
- 2 bell pepper red, yellow or green, diced
- 1 (4 ounce each) can green chile with juices, mild
- 1 jalapeño seeded and finely diced
- 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
- 1 teaspoon chili powder

Instructions
- Brown beef, onion, and garlic in a skillet over medium-high heat until no pink remains. Drain any fat.
- Place beef mixture in a 6qt slow cooker with remaining ingredients.
- Cook on low 6-8 hours or on high 3-4 hours or until veggies are tender.
- Serve with your favorite toppings.
Notes
- To thicken the soup, whisk in cornmeal or cornstarch 10-15 minutes before serving.
- Ground beef can be replaced with chicken breasts; cook longer until chicken is fully cooked, then shred and return to soup.
- Top with sour cream, green onion, and cheddar cheese for added flavor and texture.
