  • 1 pound ground beef or ground turkey, extra-lean
  • 2 cloves garlic minced
  • 1 red bell pepper seeded and diced
  • 1 medium sweet onion peeled and diced
  • 2 tablespoons chili powder
  • 2 teaspoons cumin ground
  • 1 medium zucchini grated
  • 28 ounces diced tomatoes canned
  • 15 ounces red kidney beans drained and rinsed, canned
  • 4.5 ounces green chiles see note, canned diced
  • 2 tablespoons tomato paste
  • 1 teaspoon basil dried
  • salt to taste
  • black pepper to taste
  • jalapeño sliced, for garnish
  • green onions thinly sliced, for garnish

Instructions

  1. Cook the ground beef in a large skillet over medium-high heat until well browned. Add the garlic during the last few minutes of cooking.
  2. Add the bell peppers and onions to the skillet. Cook until softened, about 3-5 minutes. Stir in the chili powder and cumin.
  3. Add the diced tomatoes, kidney beans, zucchini, green chilies, tomato paste, basil, and the ground beef mixture to a crock pot. Stir everything together until combined.
  4. Cover and cook on HIGH for 4-5 hours. Season to taste with salt and pepper.
  5. Portion the chili into bowls and top with sliced jalapenos and green onion for garnish if desired. Serve warm.
