Crock Pot Weight Watchers Chili
Description
The chili starts by browning lean ground meat with minced garlic, then cooking red bell pepper and onion until softened and developing flavor. Chili powder and ground cumin provide classic chili spices. The mixture is combined in a crock pot with diced canned tomatoes, kidney beans, grated zucchini, canned diced green chilies, tomato paste, dried basil, and seasonings. Slow cooking on high for 4 to 5 hours melds the flavors deeply while tenderizing the ingredients.
This approach keeps the chili lean but still rich and satisfying. The grated zucchini integrates smoothly, adding moisture and texture subtly. Serving with sliced jalapeños and green onions offers customizable heat levels and contrast to the chili's hearty base. The recipe's Weight Watchers points reflect its lower-fat and calorie-conscious profile.
The notes mention substituting canned diced green chilies with a fresh seeded and finely chopped jalapeño for fresh heat. This chili serves well as a main dish and holds well for leftovers.
