Crockpot Baked Beans
Description
This recipe mixes drained pork and beans with barbecue sauce, brown sugar, fresh jalapeños, diced onion, and chopped bacon, some of which is fried beforehand for additional flavor. The mixture is poured into a greased crockpot and topped with whole bacon slices before being cooked on low or high heat until melded, thick, and flavorful. The slow cook method allows the bacon fat and spices to infuse the beans thoroughly, creating a sweet, smoky, and mildly spicy profile.
Crockpot Baked Beans are versatile as a side dish for various grilled or roasted meats and are sturdy enough for potlucks or casual family dinners. Allowing the beans to rest uncovered after cooking thickens the sauce further, making it richer. The combination of textures from soft beans and crispy bacon adds interest to this home-cooked classic.
This recipe relies on the slow cooker’s convenience to concentrate flavors with minimal active cooking time, making it ideal for easy meal prep.
Ingredients
- 3 cans pork and beans (15 oz cans - drained)
- ¾ cup BBQ sauce (any brand)
- ¼ cup brown sugar
- 1 jalapeño remove seeds if you want less heat, fresh, chopped
- ¼ onion use a chopper, diced
- 10 lices Bacon
Instructions
- Spray the inside of your crock pot casserole dish with non-stick cooking spray.
- In a mixing bowl, combine the pork and beans, the bbq sauce, brown sugar, jalapeños and diced onions. Mix well.
- Chop half the bacon into pieces. I like to fry the bacon slightly before adding it in. Fold in the chopped bacon.
- Pour the mixture into the crock pot casserole dish.
- Place the whole slices of bacon on the top of the pork and beans.
- Place lid on top and cook on high for 2 hours or low for 4 hours.
- Allow to sit for 15 minutes slightly uncovered and serve. (the longer it sits the thicker the beans get)
Notes
- Frying the bacon slightly before adding improves flavor and texture within the beans.
- Letting the beans sit uncovered for 15 minutes after cooking thickens the sauce naturally.
