Crockpot BBQ Chicken
Description
The Crockpot BBQ Chicken recipe centers on chicken breasts seasoned with a BBQ rub and slow cooked in chicken broth. The low, slow cooking process breaks down the chicken fibers, resulting in very tender meat that easily shreds with forks. Once shredded, the chicken absorbs the BBQ sauce stirred in at the end, which adds tangy, sweet flavor and moisture.
The texture is soft and juicy, making it adaptable for a variety of serving options such as sandwiches, tacos, or alongside sides. Using a crockpot frees you to prep in the morning and come home to ready-to-serve BBQ chicken.
Drain off the cooking liquid before shredding for less watery results. The recipe works well with homemade or store-bought BBQ rubs and sauces, letting you tailor flavor to your preference.
Ingredients
- 2 pounds chicken breast boneless skinless
- 1/4 cup bbq rub homemade or store bought
- 3/4 cup chicken broth
- 1 1/2 cups BBQ sauce homemade or store bought
- cooking spray
Instructions
- Coat the interior of a 4, 5 or 6 quart crockpot with cooking spray.
- Coat the chicken breasts in the BBQ rub.
