Crockpot Beef and Noodles Recipe
Description
The Crockpot Beef and Noodles Recipe features beef stew meat or chuck roast seasoned with a blend of basil, parsley, onion powder, and garlic powder, cooked slowly with cream of mushroom soup and Worcestershire sauce in beef broth. The slow cooking tenderizes the beef, resulting in a flavorful and soft texture. Egg noodles are cooked separately and stirred in toward the end, soaking up the rich sauce without becoming mushy. This method creates a balanced dish with tender meat, combined flavors, and noodles that hold their shape.
The dish works well as a standalone dinner or paired with simple sides like steamed vegetables or a salad. The slow cooker makes it suitable for meal prepping or when you want to come home to a ready meal. The creamy mushroom sauce enriches the beef, providing a comforting sauce to coat the noodles.
Adjust the sauce thickness by adding extra beef broth if it's too thick after cooking. Adding peas or carrots into the slow cooker adds nutrition and color. Using a crock pot liner can aid cleanup. Stir the noodles in only after draining and cooking them according to their package instructions to maintain the best texture.
Ingredients
- 2 pounds beef stew meat cut into chunks, or beef chuck roast
- 1 ½ teaspoons kosher salt
- 1 teaspoon basil dried
- 1 teaspoon parsley dried
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon black pepper freshly ground
- 1 can cream of mushroom soup 10.5 ounces
- 2 tablespoons Worcestershire sauce
- 32 ounces beef broth unsalted
- 16 ounces egg noodles 1 package
Instructions
- Cut meat into chunks. Add the beef to the Crock Pot.
- Mix salt, basil, parsley, onion powder, garlic powder, and black pepper together. Sprinkle the spice mixture over the meat and stir to mix.
- In a small bowl, combine cream of mushroom soup and Worcestershire sauce. Pour the sauce over the meat.
- Pour beef broth over the meat mixture and stir to combine.
- Cover the slow cooker and cook on low for 7-8 hours or high for 4-5 hours or until beef is tender.
- About 30 minutes before the beef is done cooking, cook noodles according to package directions.
- Drain the noodles and stir into the beef mixture in the slow cooker.
Notes
- If the sauce is thicker than preferred, gradually add up to ½ cup additional broth and stir to adjust consistency.
- For extra nutrition and color, include a cup of peas or carrots during the slow cooking phase.
- Use a crock pot liner to simplify cleanup after cooking.
- Cook egg noodles separately according to package directions and drain well before mixing into the crockpot to prevent overcooking.
