Crockpot Beef Tips

Report
Crockpot Beef Tips feature stew meat cooked slowly with cream of mushroom soup, diced onion, and beef broth. The slow cooking tenderizes the meat while the mushroom soup adds creaminess and umami. Seasoned simply with salt and pepper, the beef tips develop rich, comforting flavors, making this an adaptable main dish suited to serve over rice, mashed potatoes, or noodles.

Description

This recipe places diced stew meat in a slow cooker with cream of mushroom soup, beef broth, and diced onion, seasoned with salt and pepper. The meat cooks on low or high heat for several hours, resulting in tender beef in a creamy mushroom sauce. The simplicity of ingredients allows the meat's natural flavors to stand out, complemented by the savory notes of mushroom soup and beef broth.

The texture after cooking is tender enough to serve comfortably over starches such as rice, mashed potatoes, or egg noodles, which absorb the sauce nicely. The dish benefits from the slow cooker allowing gradual melding of flavors and softening of meat fibers.

As noted, freezing cooked rice separately and reheating it alongside the beef tips can save time and effort. Variations in serving starch or adding other vegetables could extend the dish's versatility.

Ingredients

Servings
  • 2 lbs stew meat
  • 1 can cream of mushroom soup
  • 1 onion diced
  • 1 cup beef broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the chopped stew meat in the bottom of the crockpot. Place the rest of the ingredients over the stew meat.
  2. Cook on low for 6-8 hours or on high 4-6 hours.
  3. Serve over rice (or you can do mashed potatoes). By the way, did you know that I like to freeze my rice and then I just microwave it when I need it for dinner. Try doing that and this recipe will be even easier.

Notes

  • Serve beef tips over rice, mashed potatoes, or egg noodles for a complete meal.
  • Freezing cooked rice in portions makes reheating convenient when serving this dish.
  • The slow cooker method yields tender meat and a flavorful creamy sauce with minimal active cooking time.
