Description

This recipe begins by trimming and cubing a boneless chuck roast. The beef is seasoned and browned in oil to develop a savory crust. Onions and sliced mushrooms are sautéed in the same pan until softened, then flour and herbs such as thyme and rosemary are added and cooked briefly to form a flavor base.

The beef broth is whisked in, scraping up browned bits to create a flavorful gravy. The beef cubes are returned to a slow cooker and the gravy poured over them. Cooking on low for about eight hours breaks down the meat connective tissue, yielding very tender beef tips infused with herb and mushroom flavors.

To finish, a mixture of reserved gravy and flour is whisked together and stirred back into the slow cooker to thicken the sauce. The beef tips and mushrooms are well coated in a rich, glossy gravy that complements the tender meat.

This dish is well suited to serving over mashed potatoes, noodles, or rice. Preparing certain ingredients like trimming and chopping the night before can save time on cooking day. Using low sodium broth allows control over seasoning levels.

  • 3 pound chuck roast boneless
  • 1 tablespoon canola oil
  • 1 cup white onion diced, or yellow onion
  • 8 ounces button mushrooms sliced
  • 1/4 cup all-purpose flour divided
  • 1/2 teaspoon thyme dried
  • 1/2 teaspoon rosemary crushed, dried
  • 1 1/4 cups beef broth
  • salt
  • black pepper

Instructions

  1. Heat a large skillet over medium-high heat.
  2. While skillet is heating up, trim the fat from the roast and cube it. 
  3. Add oil and swirl pan to coat.
  4. Season roast with salt and pepper. 
  5. Brown roast on all sides, and then remove to a plate.
  6. Stir in onions and mushrooms, and cook until beginning to soften, about 3 minutes. 
  7. Sprinkle flour and herbs over vegetables, and stir in. Cook, stirring constantly, for 1 minutes. 
  8. Whisk in beef broth, scraping up any browned bits from the pan, and bring to boil. 
  9. Remove gravy from heat.
  10. Add the browned beef cubes to the slow cooker insert.
  11. Pour the gravy over the beef tips.
  12. Cover and cook on low for about 8 hours, or until roast is fork tender.
  13. In a bowl, add 1 cup of gravy from the slow cooker and remaining 2 tablespoons flour. Stir together until combined.
  14. Whisk beef/flour mixture into slow cooker, and let it continue to cook for 20-30 minutes. 

Notes

  • You can substitute other similar cuts of beef such as rump roast if preferred for the beef tips.
  • If using fresh herbs, increase the quantity to 1 to 1½ teaspoons each for stronger flavor.
  • Choosing low sodium beef broth allows better control over the saltiness of the finished dish.
