CrockPot Breakfast Casserole

This CrockPot Breakfast Casserole layers browned breakfast sausage link pieces, O'Brien style diced potatoes with onions and peppers, diced tomatoes, and shredded cheddar cheese, enveloped in an egg and milk mixture seasoned with salt and pepper. Slow cooking for several hours melds the flavors into a hearty, tender breakfast dish with a rich texture and savory profile.

Description

Sauteed breakfast sausage links are cut into pieces and combined in a crockpot with diced potatoes prepared O'Brien style (containing onions and peppers), fresh diced tomato, and shredded cheddar cheese. The eggs whisked with milk and seasoned with salt and pepper are poured over the layered ingredients. The mixture is stirred to combine evenly before slow cooking on low heat for 6 to 8 hours, allowing the eggs to set and ingredients to fully meld. The extended cook time yields a soft, cohesive casserole.

The casserole offers a rich savory flavor from the sausage and cheese, balanced by the sweetness and texture of the potatoes and fresh tomatoes. The slow cooker method removes the need for stovetop baking and makes this dish convenient for morning preparation. The dish serves well as a wholesome breakfast or brunch centerpiece.

Cooking times may vary by crockpot shape and size, with oval models generally cooking slightly faster than round ones. Adjust timing toward 6 hours as a baseline for oval models. The casserole is suitable for preparing ahead and keeping warm until serving.

  • 2 pounds potato hash browns with diced onions and peppers, O'Brien style

Instructions

  1. Brown sausage links in a large skillet until cooked through and cut into pieces.  Set aside.
  2. In a large bowl, whisk the eggs and milk together. Add salt and pepper.
  3. Spray the crockpot with cooking spray and layer the cut-up sausage, potatoes O'Brien, tomatoes, and cheese. Pour the egg mixture over the top. Stir everything together.
