Crockpot Breakfast Casserole
Description
The Crockpot Breakfast Casserole combines cauliflower florets, diced red bell pepper, cooked sausage slices, and shredded cheddar cheese layered in a crockpot. An egg mixture seasoned with oregano, paprika, and salt is poured over the layered ingredients. Slow cooking on low heat for 6-7 hours gently cooks the eggs and melds the flavors.
The cauliflower softens from blanching and slow cooking, complementing the savory sausage and melted cheddar. The herbs and paprika add subtle aromatic and smoky elements without overpowering the dish. This results in a hearty casserole with varied textures from tender vegetables to the firm cooked eggs and melted cheese.
This casserole suits large gatherings or meal prepping since it yields multiple servings. It can be served directly from the crockpot and pairs well with fresh fruit or toast for a complete breakfast.
To save time, prepare ingredients like slicing sausage and blanching cauliflower in advance and store them refrigerated. The casserole can be refrigerated in an airtight container for up to four days. Greasing the crockpot insert well helps prevent sticking during cooking.
